Again – I LOVE salsa. ❤
This recipe was developed by starting with my love for Pico de Gallo and then adding some peppers for additional color, flavor, and heat.
Traditionally, Pico de Gallo is made with tomatoes, onions, cilantro, jalapeno, salt, and lime juice. Which is such a classic go-to. I could eat the entire bowl. And then also eat more. 🙂
This Pico has those ingredients plus red, orange, and yellow peppers. If you aren’t a big fan of adding the peppers – that is OK!
What you’ll need:
2 large tomatoes the vine
*You can also use Roma tomatoes – if so, you’ll want to double the number used.
1 large yellow onion
1 cup fresh chopped cilantro (the more cilantro the better in my book!)
1 – 2 jalapenos, seeds removed and chopped
*Use more or less jalapeno depending on how hot you like your salsa. You can also leave some seeds if you like that extra heat.
1 red pepper, seeded and chopped
1 orange pepper, seeded and chopped
1 yellow peppers, seeded and chopped
Juice of 1 lime
Salt to taste
What you do:
Add ingredients in order to a medium bowl. Gently mix to combine.
With tortilla chips and enjoy!!
