Watermelon Salsa

Chips and salsa is probably my #1 favorite food. Honestly, I could live off of it. Especially when there are so many different and fun varieties of salsa that you can make!

This Watermelon Salsa is easy to make and super delicious and refreshing to eat. It is the perfect summer BBQ dish!

What you’ll need:

3 cups chopped watermelon
1 cucumber, peeled and chopped
1/2 red onion, chopped
1 jalapeno, seeded and chopped
8 basil leaves, finely chopped
1 T sugar
1/4 cup lime juice
Zest of 1 lime

What you do:

Wash all ingredients. Chop the watermelon (3 cups is about 1/4 of a seedless watermelon), peel and chop cucumber, chop onion, seed and chop jalapeno, chop basil. Pro tip: to easily chop the basil you will do what is called “chiffonade”. Simple stack each basil leave and tightly roll them up, then chop and you will have nice thin ribbons of basil.Β 

Add ingredients to a medium bowl. Add sugar, lime juice, and lime zest. Gently mix.
