Chocolate Chip – Butterscotch Chip – Pretzel Cookies

If you want to be your dad’s favorite, just make these cookies for Father’s Day!

My dad loves chocolate chip cookies, he loves pretzels, and he also loves butterscotch! These cookies really are the triple threat.

Bonus — they are super soft, chewy, and like everything I make, very easy!

Even if you don’t make these for your dad, make them for yourself! They are the perfect combination of sweet and salty – my absolute favorite!

Here’s what you’ll need:

2 cups + 2 T flour
1/2 t baking soda
1/2 t salt
3/4 cup (1.5 sticks) unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1 egg, at room temp
1 egg yolk, at room temperature
2 t vanilla extract
1/2 cup pretzel pieces
1/2 cup butterscotch chips
1/2 cup milk chocolate chips

Mix Dry Ingredients First

Combine flour, baking soda, and salt together in a medium bowl. Set aside.

Combine Wet Ingredients

In a large bowl using a hand held or stand mixer, beat the butter on medium until smooth and creamy (about 1 minute).

Add the brown sugar and granulated sugar, then beat on medium until fluffy and light in color.

Beat in egg, egg yolk, and vanilla extract on med-high speed. Scrape down the sides and bottoms of the bowl as needed.

Mix Dry into Wet Ingredients

Slowly add dry ingredients to wet ingredients until combined. The cookie dough will be thick.

The Best Part..

Add pretzels, chocolate chips, and butterscotch chips. Beat on medium until combined.

Cover dough tightly and chill in the refrigerator for at least 30 minutes and up to 4 days.

Bake

Preheat over to 325 degrees. Roll into balls (about 1.5 T each) and arrange on baking sheet. Bake for 10 minutes.

Note — the cookies will appear light, soft, and fluffy – they do NOT need additional baking time. Let them cool on the baking sheet outside of the oven for about 3 minutes.

While the cookies cool on the baking sheet add additional chocolate chips, butterscotch chips, and pretzels pieces to the tops of each.

Transfer cookies to a wire rack to finish cooling.

Happy Father’s Day!

I gave these cookies to my dad for Father’s Day and he loved them! And, even though parents aren’t supposed to admit it, I think I might be the favorite? No offense to my sister … πŸ˜‰

    I just made a similar recipe last night and was pleasantly surprised how well the pretzels taste in a cookie! I will have to try your recipe out, I still have some pretzels left.
