Strawberry Rhubarb Crisp

Oh my goodness do we have a TON of rhubarb!

Up until 2 years ago I had never even had rhubarb and now I look forward to it coming back every summer.

If you’ve never had rhubarb before, you definitely should. It is crisp (kind of like celery) and very tart and is best when cooked with sugar. Rhubarb is not technically a fruit but most recipes that use rhubarb treat it like one.

My first summer with rhubarb I wanted to try and make every single recipe involving rhubarb that I could find. I made jams, crisps, cookies, cakes, bars, pies, etc. etc. I even tried it raw dipped in sugar!

I found that my favorite recipe to bake and to eat was strawberry rhubarb crisp! It is easy and super delicious — the perfect summer dessert (especially served with some vanilla ice cream)!!

What you’ll need:

3 cups chopped rhubarb
3 cups strawberries
1 teaspoon orange zest
1 cup sugar
1 1/3 cup flour, divided
1 cup brown sugar
1 cup old fashioned oats
1/2 teaspoon cinnamon
1/2 cup butter, melted

Prep:

Preheat the oven to 350 degrees. Grease a 9 x 13 baking dish and set aside.

Wash and chop the rhubarb and strawberries. Place in a large mixing bowl.

Next, add orange zest to mixing bowl.

Add sugar and 1/3 cup flour to bowl and gently mix.

Place mixture into pre-greased baking dish.

Next:

In another bowl, mix the remaining flour, brown sugar, oats, and cinnamon. Add the melted butter and blend until combined.

Pour dry mixture over the rhubarb/strawberry mixture in the baking dish, pat gently.

Bake:

Bake at 350 degrees for 35-40 minutes (mine baked in 35).

Serve:

Serve warm with vanilla ice cream or cool whip!

Recipe:

  1. Preheat oven to 350. Grease a 9 x 13 baking dish, set aside
  2. Wash and chop rhubarb and strawberries. Place in large mixing bowl.
  3. Add orange zest to rhubarb / strawberry mixture. Add sugar and 1/3 cup flour, mix well. Place into pre-greased baking dish.
  4. In another bowl mix remaining flour, brown sugar, oats, and cinnamon. Mix in the melted butter until well combined.
  5. Place the oat mixture over the rhubarb / strawberry mixture. Gently pat.
  6. Bake for 35-40 minutes or until golden brown and bubbly around the edges.
