Spinach Dip with Beer Bread

This is a cold spinach dip and is perfect for summer. It is quick, easy, and super impressive to bring to any party.

I add red pepper and water chesnuts for crunch and additional flavor.

I love this dip paired with beer bread but it is equally delicious on crackers. I like the taste of beer and will use an IPA to make the bread. If you like beer but prefer a lighter taste you can use a light beer such as Bud Light or Miller Light. If you like the bread idea but do not love the taste of beer you can make beer bread with carbonated water instead.

Here is what you’ll need:

For the dip:
1 pkg cream cheese, softened
1 cup sour cream
1 pkg frozen spinach, thawed
1/2 red pepper, chopped
1 can water chesnuts, chopped

For the bread:
1 pkg beer bread mix
1 12 oz. bottle beer (any beer you like, or carbonated water)

Begin by making the beer bread, it will take 45-50 minutes to bake in the oven.

Then start on the dip by thawing the spinach in the microwave – this will take 7-8 minutes.

Meanwhile, add the cream cheese and sour cream to a large mixing bowl. Chop the red pepper and add to the bowl.


Drain the can of water chesnuts, chop, and add to mixing bowl. I bought a container of sliced water chesnuts but wanted them a little smaller so I still chopped them. I used about 3/4 the can.

Remove the spinach from the microwave and place on a paper towel or clean kitchen towel to remove any of the liquid.
Note: it is really important to remove all liquid from the spinach or your dip will become really runny.

Gently combine all ingredients in mixing bowl. Add salt and pepper to taste. Serve cold with beer bread!



Spinach Dip w/ Beer Bread

1 8 oz. pkg cream cheese
1 cup sour cream
1 pkg frozen spinach
1/2 red pepper, chopped
1 can water chesnuts
s&p to taste
1 pkg beer bread mix
1 12 oz can beer

  1. Follow the directions on the back of the beer bread mix box and begin baking in the oven.
  2. Thaw spinach in microwave for 7-8 minutes, stirring half way through.
  3. Meanwhile, add cream cheese, sour cream, chopped red pepper, and chopped water chesnuts to mixing bowl.
  4. Remove spinach from microwave and place onto a paper towel to remove any liquid.
    **it is very important to remove all of the liquid or your dip will become very runny.
  5. Add spinach to mixing bowl and gently combine.
  6. Add salt and pepper to taste.
  7. Chill in refrigerator until ready to use.
  8. Remove beer bread from oven and cool completely. Once cool, slice the bread into chunks for easy dipping.
  9. Enjoy!
